Salmon is a great source of omega-3 fatty acids which have strong anti-inflammatory properties and are important for brain health.  We’d recommend buying wild caught salmon (if you can find it) to avoid the pollutants and toxins found in farmed salmon (Atlantic salmon).

And feel free to mix it up with the veggie choice – we also like to include steamed broccoli or cauliflower.

We love this recipe since it includes rich and flavorful chicken thighs along with roasted brussels sprouts (one of our faves!).

And it’s super easy to make, since you can put everything on a single sheet pan then just pop it in the oven.

It is very flavorful, with a savory garlicky but also slightly sweet sauce.  We love it because you can just throw everything into one pan, and can easily make adjustments if you want (and depending on what veggies you have on hand!).
